Cut the ends off the plantains and cut them into 2 pieces. Peel them and slice them in half lengthwise. In a large skillet over medium-high heat add 1/4 cup oil and fry the plantains slowly until they are browned and caramelized, about 15 minutes. Drain on paper towels. Season with salt and serve.

    I bought some plantains at the grocery store tonight thinking I might try them. This is a very simple, easy to understand recipe that makes a great side dish or a light dessert. It does work best with a riper plantain.

    this recipe is so simple, and the taste is amazing. I didn't use salt, it's not necessary... I recommend you use very riped plantains (their skin looks mostly black
