Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 4 to 6 slices bacon, chopped
  • 1 large onion, chopped
  • 3 pounds fresh green beans
  • 2 quarts chicken stock or water
  • Kosher salt and freshly ground black pepper

Directions

Heat a heavy bottomed pot over medium high heat. Add the olive oil, bacon, and onions and cook until the onion is soft, about 5 to 10 minutes. Stir in the green beans and chicken stock; season with salt and pepper. Reduce the heat to low, and cook the green beans until they are soft but not mushy, about 30 to 45 minutes. Taste and adjust seasoning.

    OK, I think Food Network overgeneralized the prep in this, as well as a few ingredients (and lacking certain amounts).... *First, you should cook the bacon with the olive oil...don't add the onions (or garlic from the jar...which I thought was an AWESOME addition). This way the bacon actually cooks and greases instead of just boils with the stock. More flavor that way. *Second, use LOTS of pepper and use garlic salt instead. Again, more flavor. *Third, I added some liquid smoke (about four tablespoons) and a couple shots of Worcestershire sauce. *Fourth, I used beef broth instead of chicken broth or stock, and less of it. Like, half a quart. *Finally, I added some mushrooms in there to help sop up the stock (which makes the mushrooms tastier). Read more

    I wanted to make something other than the traditional green bean casserole. I decided on this recipe because with bacon and... onions how can you go wrong and it seemed quick and easy to make. It was not as flavorful as I thought it to be. I will not be making this again.Read more
