Ingredients
- 5 ounces (approximately 1 1/4 cups) roasted macadamia nuts, ground
- 1/2 cup panko (Japanese-style bread crumbs)
- 1/4 cup sugar
- 2 tablespoons all-purpose flour
- 1/4 teaspoon salt
- 3 tablespoons butter, melted
Directions
In a medium mixing bowl, combine the nuts, panko, sugar, flour, and salt. Add the melted butter and stir to combine.
Press the mixture into the bottom of a 9 or 10-inch cake, pie, or springform pan as a crust for a cheesecake or cream pie. Bake according to instructions for cheesecake or pie. If baking for a precooked pie filling, preheat the oven to 375 degrees F. Place on the center rack of the oven and bake for 20 to 25 minutes.

My daughter is allergic to wheat so I was looking for a nut based crust recipe. I used this crust for Alton's Moo-less Chocolate Pie (also fabulous. I made the following swaps: Almond meal instead of Mac Nuts - I had just bought it so I wanted to use it. Instead of panko which has wheat, I toasted store bought brown rice bread and made bread crumbs. I pressed it into my springform pan and it was barely enough to fit the pan. Maybe I have an extra large pan, I'm not sure. Everyone loved the crust and the pie and it was super easy to make!
