Ingredients

  • 3/4 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup whole milk or buttermilk
  • 1/3 cup vegetable oil
  • 1 egg
  • 1 1/2 teaspoons sugar
  • 3/4 teaspoon vanilla extract
  • Butter and syrup, for serving

Directions

In a medium bowl, combine the flour, cornstarch, baking powder, baking soda, and salt; mix well. Add the milk, vegetable oil, egg, sugar and vanilla and mix well. Let the batter sit for 30 minutes.

Preheat a waffle iron. Do not use non-stick spray on the waffle iron; the oil in the batter will allow the waffle to release easily. Follow the directions on your waffle iron to cook the waffles. Serve immediately with butter and syrup.

I really wanted this to be great but the waffles were kind of dense and heavy. Also they didn't have the crisp sides. I followed the recipe precisely and we have a wonderful (flipping waffle iron so I just think the waffles weren't what I was looking for.

What I liked about this recipe besides the flavor is the "crispy" factor. It had a great crisp even after syrup had sat on it a while. Yummmmmmy. I've been looking for a great waffle recipe and now I have.
Note: It makes a small portion, so I'm going t double it up next time.

I have tried many waffle recipes before that were ok, so so, or tasty, but not off the charts, homemade goodness. I even resorted to a favorite pancake recipe to try to capture some waffle goodness, but that still didn't hit the mark. I have to say, this one does it! It makes light, fluffy, crispy, sweet waffles that just bring warm smiles to the face. Thanks for posting. It's my new fave!
