Ingredients
- 20 ladyfinger cookies
- 1 cup ricotta cheese
- 1/4 cup mascarpone cheese
- 3/4 cup heavy cream
- 1 tablespoon cognac
- 1/2 cup powdered sugar
- 1/2 cup mini chocolate chips
- 1 cup strong coffee, cooled
- Cocoa powder, for dusting
Directions
Cut the ladyfinger cookies in half. Reserve.
In a large bowl, using a hand-mixer, combine the ricotta, mascarpone, cream, cognac and sugar until light and creamy. Fold in the mini chocolate chips.
Pour the coffee into a shallow dish. Dip 2 ladyfinger halves into the coffee and arrange them on the bottom of a shallow glass serving cup. Liberally top with some of the cheese mixture. Repeat with another layer of dipped ladyfingers and cheese. Dust with cocoa powder. Repeat with the remainder of ingredients to make a total of 4 individual servings. Allow to cool before serving.

The recipe was easy and delicious. I double the mixture for a 9 by 13 pan. Much better after it sits overnight. Used the ricotta and cream cheese.

The flavor was excellent! I too used Kahlua in place of the Cognac. I also used an 8 x 8 pyrex dish instead of individual serving cups. Perfect fit!
