Ingredients
- 1 cup sugar
- 3 tablespoons cornstarch
- 1 1/2 cups water
- 1 (3-ounce) box strawberry gelatin
- 2 large red grapefruit, sectioned
- 1 prebaked pie shell
- Whipped cream, for serving
Directions
In medium saucepan, combine sugar and cornstarch, add water and cook over medium heat until thick and clear. Add strawberry gelatin and stir to dissolve. Let cool, and add grapefruit sections. Pour mixture into baked pie shell and chill until firm, about 2 hours. Top with whipped cream and serve.

It's easy, tasty, light and refreshing. It also offers a pretty presentation. Nice choice for a light and fast dessert.

I never thought I would like grapefuit but this recipe makes it great! I took it to work and everyone wanted the recipe...this pie was easy, tasty and is a great refeshing treat in warm weather.

I learned of this recipe from Paul
Harvey News. I lost the recipe, but thanks to the Food Network web site, I found it. I'm not a huge grapefruit fan, but this is a tasty, easy fun recipe to use up those grapefruits that my family sends me from Calif. One or two pies a year is enough.
