Ingredients

  • 1 cup hulled barley
  • 1 tablespoon unsalted butter
  • 1 teaspoon kosher salt
  • 2 cups boiling water

Directions

Preheat the oven to 375 degrees F.

Place the barley into a 1 1/2-quart ceramic or glass baking dish (with a lid) and add the butter, salt and boiling water. Stir to combine. Cover the dish tightly with aluminum foil and place the lid on top of the foil. Bake on the middle rack of the oven for 1 hour.

After 1 hour, remove the cover, fluff with a fork and serve immediately.

    I used a little more water. Put in 1/2 a fresh jalapeno and instead of the salt a cube of chicken bullion. Also skipped the... butter, no need for it. Came out great!!! Great different choice that rice or pasta. Also...no burt food on the bottom of the pan!!! No stirring!!Read more

    This is really a conversion of Alton's earlier (also fabulous) recipe for brown rice. Finding the hulled barley is a task,... but when you look at the nutritional differences it is well worth the search. I make this with a combination of oat groats, brown rice and wheat berries (any whole grains) and eat it as meat on occasion -- fantastic! I have converted many people to hulled barley and brown rice becuase they've always tried boiling it and so they thought they didn't like it -- until they tried this version.Read more
