Ingredients

  • 2 tablespoons canola oil
  • 1 Granny Smith apple, peeled, cored, and cubed
  • 1 pint unfiltered apple juice
  • 1/4-teaspoon caraway seeds
  • 1 1/2 teaspoons kosher salt
  • Freshly ground black pepper
  • 1/2 head of red cabbage, shredded

Directions

Heat the canola oil in a pan over medium heat. Add the apple to the pan and cook until lightly browned. Increase the heat to high and add the apple juice, caraway seeds, salt, pepper and cabbage to the pan. Cover the pan and shake to toss the cabbage to coat.

Reduce the heat to low and cook for 20 minutes.

    Why would you cook cabbage any other way...

    Being a cabbage lover, I had to try this recipe when it previewed and it did not disappoint, although I must admit to a... couple changes. I had leeks and thought that this would be a good spot for them, adding them with the apples, and substituted sparkling apple cider for the apple juice. The cooking method and time is exactly right and the cabbage is very light and refreshing; just the right counter for a roasted chicken, pork chops or a really good sausage. I cannot imagine a better recipe to showcase what many consider to be a ho-hum vegetable. Cabbage is so healthy, affordable and has a significant shelf life in the fridge. This will be so easy to make a regular in my menu planning. Exceptional.Read more

    After my husband saw this episode, he insisted we try this, and I'm glad he did! Per Steve's advice below, I thickened the... cooking liquid with cornstarch to make a sauce for both the cabbage and the fresh Polish sausage we had it with. I've never had better cabbage!Read more

    I HATE CABBAGE!!!! OR SO I THOUGHT I DID :)

    Okay, so I've hated cabbage as long as I can remember but I thought that I'd try this out to see if I "could" like it. WELL... THANK YOU ALTON YOU DON'T EVER FAIL ME!     This recipe is good, even if you don't have all the ingredients. After rendering bacon ends to produce the oil, I added the... listed apple AND additionally leftover cubed pork roast. Of course I didn't have the exact liquid so instead, used an even mixture of cranberry juice and beer (Winterbrew). Tasted and smelled great plus was filling.Read more

    Don't forget the sauce!

    After it is done cooking do not discard the remaining liquid. Strain it, then add some butter and a tablespoon of corn starch... and reduce it to a nice thick sauce. Pour this concentrated deliciousness over the cabbage after serving and it will be even better!Read more
