Ingredients

  • 2 pints medium size strawberries, hulled and sliced
  • 1 (750 milliliter) bottle red wine
  • 1/4 cup orange blossom honey
  • 1 teaspoon finely chopped lemon zest
  • 1 teaspoon ground black pepper
  • 1/2 cup sugar

Directions

In a bowl combine all ingredients. Let stand in refrigerator for 2 hours

    Try cheap red vermouth for the wine, and just use enough to cover the sliced berries. Honey and sugar to taste. Makes a nice cooler with a shot of club soda.

    Used 1/2 bottle merlot with the 2 pints berries, it overwhelmed everything including the honey and sugar

    The strawberries were OK, but not great. We used a merlot to macerate and it completely dominated the strawberry flavor and canceled out the honey and sugar. I would strongly suggest a sweet red wine, and maybe reduce the volume of the wine. We used the berries in the Berry Pudding recipe that Alton also suggested. It could have been good but instead was only carried to acceptable by the whipped cream.

    So when this recipe calls for a red table wine, think of something light red and sweet like a white zin.
