Ingredients
- 3 tablespoons dry white wine
- 3 tablespoons fresh lemon juice
- 3 tablespoons olive oil
- 1 tablespoon chopped rosemary
- Four halibut steaks, (6 ounces each)
- Salt and freshly ground pepper
Directions
Whisk together the wine, lemon juice, olive oil and rosemary in a small shallow baking dish. Add the halibut and turn to coat. Marinate in the refrigerator for 1 hour, turning once. Preheat grill. Remove fish from marinade and season with salt and pepper to taste. Grill the steaks for 3 to 4 minutes on each side or to desired doneness.

WOW! Can't believe this was so easy and was so good. The fish was a thick piece of halibut and was so very moist. We marinated the fish for about 45 minutes,and it still tasted like halibut...the marinade was just so mellow. Will make it again. Thanks, Bobby.

I reduced the marinade while the fish was cooking and tossed in some butter at the end for a sauce. Simple but tasty marinade if you like lemon and rosemary.
I actually used gulf redfish and since it was raining sauteed it and oven finished.

Halibut is rather expensive, so I was a bit apprehensive in making it. The last time I cooked it on the BBQ it completely fell apart. This recipe is a keeper. Garlic definitely added "punch" to the flavor. I used quite a bit and of rosemary and lemon and liberally seasoned it with S/P. After marinating the steaks, I pan fried it on each side for about 5 minutes (the steaks were rather thick. I poured some of the marinade into the pan as well. Then,I put them in the oven at 350 for about 15 to 20 minutes. It came out beautifully and it was so delicious.
