Ingredients

  • 1 pound green beans, trimmed
  • 3 tablespoons olive oil
  • 4 shallots, thinly sliced
  • Salt and freshly ground black pepper
  • 1/4 cup hazelnuts, toasted and coarsely chopped
  • 1 tablespoon finely chopped lemon zest
  • 2 tablespoons chopped fresh parsley leaves

Directions

Preheat oven to 425 degrees F.

Toss the green beans in a large baking dish with the oil and shallots and season with salt and pepper. Roast until just cooked through and golden brown, about 15 to 18 minutes. Combine the hazelnuts, zest, and parsley in a small bowl. Transfer green beans to a platter and sprinkle with the hazelnut mixture.

    Fabulous New Twist On a Pretty Blah Vegetable

    Green beans on their own are pretty bland and no one I know really likes the teeth-squeaky component that comes with steaming... or blanching. The roasting removed that and the addition of roasted shallots provided a great richness. Top that off with the bright flavors of fresh lemon zest and parsley and the crunch of what I would guess almost any toasted nut would offer, and you have a side dish that works with any roasted meat AND pasta - and straddles the seasons too!     This were excellent both with and without the nuts. Do use the lemon zest because it adds a fantastic background note. I... used frozen green beans letting them sit on the pan to thaw before putting into the oven. I pulled them out after everything began to brown a bit (about 20 min.)
