Pour enough oil into a large, heavy pot to come at least halfway up the sides of the pot (enough so the tenders can be submerged when frying). Heat the oil over medium heat until a deep-frying thermometer inserted in the oil reaches 350 degrees F.
Meanwhile, put the flour in a shallow bowl and add seasoning salt to taste. When the oil is hot, roll the chicken in the flour mixture to coat and thread onto wooden skewers. Fry the chicken skewers until golden brown, about 7 minutes. Season the chicken with salt and pepper.
