Ingredients

  • Cooking spray
  • 8 ounces cooked elbow macaroni
  • One 12-ounce can evaporated milk
  • 1 1/2 cups whole milk
  • 1/4 cup (1/2 stick ) of butter, melted
  • 1 teaspoon salt
  • Dash of pepper
  • 2 large eggs, beaten
  • Two 10-ounce bricks sharp Cheddar cheese, grated (about 5 cups)
  • Dash of paprika

Directions

In a large 4-quart slow cooker sprayed with cooking spray, mix the macaroni, evaporated milk, milk, butter, salt, pepper, eggs and all but 1/2 cup of the grated cheese. Sprinkle the reserved cheese over the top of the mixture and then sprinkle with paprika. Cover and cook on low heat for 3 hours and 15 minutes. Turn off the slow cooker, stir the mixture and serve hot.

Cook's Note: If you don't have a slow cooker, grease a 9-by-13-by-2-inch pan with butter, add the mixture and bake at 350 degrees F for 50 minutes.

I grated fresh cheddar off the block, pre shredded is nasty stuff.
Left the eggs out,to prevent curdling, cooked in crockpot for hour and a half on low.
Poured in cassarole dish, topped with a little more grated cheese and panko bread crumbs,
put under broiler until cheese is melted and bread crumbs are crispy.
    YUMMY!!!!! YUM YUM!!!!!

I always read prior reviews before trying a recipe. I loved this old fashioned style mac and cheese. I agree with a few of the reviewers that this dish did not curdle, but that appearance was from the eggs. I made a few changes and my family loved it and it was SO easy. I used a whole box of macaroni (I used multi grain. 2 cans (12 oz each of evaporated milk, kept the whole milk at 1-1/2 cups. 3/4 stick of butter, I should have doubled the salt, but will do so next time. I used 4 eggs and not quite double on the cheese. I used 16 oz of sharp cheddar and 8 oz of Colby Jack and grated the cheese myself. This is a true comfort food. Oh, I accidentally cooked it on high, but only for 1 hr. I cooked the pasta only part way prior to adding to the slow cooker, to avoid over cooked macaroni.
