Ingredients
- 1 jicama, peeled, sliced, julienned
- 3 oranges, supremed
- 1 small red onion, diced
- 1 jalapeno pepper, stemmed, seeded, chopped fine (wear rubber gloves)
- 1 tablespoon honey
- 2 tablespoons chopped cilantro
- Salt and pepper to taste
Directions
Combine all ingredients. Refrigerate for 1 hour.

First off, I love Jicama. I prepare as often as I can so whenever I see a recipe for jicama I try it. Because this recipe calls for orange juice, I substituted mandarine oranges in place of the mango. Either fruit is wonderful to use. And Jersey corn makes this salad hard to beat.
