You can create up to five timers

Ingredients

  • 3/4 cup cooking oil
  • 1 cup sugar
  • 2 eggs
  • 1 1/2 cups flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla
  • 1/4 cup fresh orange juice
  • 2 tablespoons grated orange rind

Directions

Combine oil, sugar and eggs. Mix well. Add remaining ingredients. Blend, do not over mix. Pour into greased muffin pan. Bake at 350 degrees for 10 to 15 minutes.

TIP:

RED ORANGES

Use blood oranges in your favorite recipes as you would regular oranges. Taste for sweetness, you may have to add a bit more sugar in some recipes.

    I'm glad I read the reviews first. I just made these this morning, using only 1/4 cup vegetable oil, and cooking them for at least 15 minutes. They were good, and very simple to make. I might try between 1/4 and 1/3 cup of orange juice next time, as they were a little dry, but not too much. I like that the ingredients were simple, all things that I had on hand, so we could entertain guests this morning even though we couldn't get to the store last night due to snow.

    I somehow forgot to use oil entirely. They were good, but a bit dense. I'd make them again, but I'm not going to cry when they're all gone.

    Although the batter was tastey, they were too wet. After my third attempt, I used 1/2 cup oil and 1 3/4 flour. This is almost right. They are very good tasting, but need a little tweek. I definetly will use this recipe again, with the changes.
