Ingredients
- 2 pounds fresh peaches
- 1 1/2 cups simple syrup (recipe follows)
- Juice of 1 lemon
Directions
Score bottom of peaches with an X and boil for about 10 seconds in boiling water and peel off skin. Remove peach pits. Puree peaches in a food processor or blender. Pour puree into a bowl and stir in simple syrup and lemon juice. Taste and adjust syrup or lemon juice to taste. Freeze in an ice cream maker using manufacturers instructions.
Simple Syrup:
- 4 cups water
- 4 cups sugar
Stir water and sugar into a saucepan. Place pan over high heat and bring to a full boil. Let syrup cool before using. Store leftover syrup in a glass jar.

Turned out really tasty. I had a lot of trouble peeling the peaches using this method, and ended up just peeling them with a knife. I also added a splash of bourbon, because I think a little alcohol in sorbet helps with the consistency, and also peaches and bourbon are delicious together. It was a little on the sweet side for me, so I'll just add a little less simply syrup next time.

Very good. Instead of fiddling around with an ice cream maker, I just poured the mixture into popsicle molds. They came out great! You can easily half the simple syrup recipe and still have enough for the recipe and some leftover. Not sure why the quantity is so large if you only need a cup and a half for the recipe.
