Ingredients

  • 1 mango, peeled and diced
  • 1/2 cup peeled, diced cucumber
  • 1 tablespoon finely chopped jalapeno
  • 1/3 cup diced red onion
  • 1 tablespoon lime juice
  • 1/3 cup roughly chopped cilantro leaves
  • Salt and pepper

Directions

Combine the mango, cucumber, jalapeno, red onion, lime juice and cilantro leaves and mix well. Season with salt and pepper, to taste.

    Wow!!!! This was really fabulous and so quick and easy. Followed the recipe fully, except to delete the cucumber and replace it with one Hass avocado as several reviewers have indicated Ellie did on her show. Will try it with the cucumber next time. I served the salsa over pan sauteed tilapia fillets and it turned out so fresh and healthy. Will definitely make this again!!!

    I loved the cucumber in this. We did substitute 1/2 a habenaro pepper for the jalapeno...but we like it spicy:

    Delicious over grilled fish. I made it with a few changes. I used habanero chile instead of the jalapeno because I like spicier food. I also added a diced avocado which added a nice creamy counterpoint to the habanero. Unfortunately I forgot to buy cilantro, so I made it without, but I wouldn't recommend it. I was definitely missing the cilantro. The cucumber did give it a nice crunch but could easily be left out and the flavor wouldn't suffer.
