Ingredients

  • 1 mango, peeled and diced
  • 1/2 cup peeled, diced cucumber
  • 1 tablespoon finely chopped jalapeno
  • 1/3 cup diced red onion
  • 1 tablespoon lime juice
  • 1/3 cup roughly chopped cilantro leaves
  • Salt and pepper

Directions

Combine the mango, cucumber, jalapeno, red onion, lime juice and cilantro leaves and mix well. Season with salt and pepper, to taste.

    Awesome recipe.....I was looking for something with avacados because I had two in the refrigerator that needed to be... utilized. It ends up that they were very ripe so I mashed them with some lime juice and lime zest and some roasted garlic, salt and pepper. I spread that on some toasted bagettes and topped it off with this salsa. I made the salsa exactly as called for. This was absolutely heavenly. Thanks for sharing this.Read more

    I made this recipe last night and tweaked it a wee bit. I added an extra half cup of cucumber and a tablespoon of grated... ginger. I used ginger that I had peeled and froze - easier to grate that way. We served it with corn chips and then again with seared scallops - I will double the recipe next time!Read more
