Ingredients

  • 2/3 cup brown rice
  • 2/3 cup wild rice
  • 3 cups low-sodium chicken broth
  • 1 orange, peel and pith removed, segmented and sliced (about 2/3 cup)
  • 10 large basil leaves, sliced into ribbons (about 1/3 cup)
  • 1/4 cup minced red onion
  • 3 tablespoons chopped pistachios, lightly toasted
  • 1 teaspoon finely grated orange zest

For the dressing:

Directions

Combine brown rice, wild rice and chicken broth in a saucepan and bring to a boil. Cover, reduce heat to a simmer and cook until all water is evaporated and rice is fully cooked, about 45 to 55 minutes. Remove from heat and cool completely.

When rice is cool, add orange slices, basil, red onion, pistachios and orange zest; mix to incorporate.

For the dressing:

Combine the red wine vinegar, olive oil, orange juice, mustard, honey and salt in a metal bowl and whisk to incorporate.

Pour over rice mixture and toss to incorporate.

    I made this last night with a roasted cornish game hen and it really added a lot to the dinner. I steamed Uncle Ben's Long Grain and Wild Rice instead of what the recipe called for, mostly because I really like the flavor. After reading some of the other posts I decided to build the rice mixture to my taste rather than following the recipe amounts exactly. This worked out much better for us since we prefer less red onion and basil in the overall flavor of the rice. The dressing we really enjoyed and used the rest the next night on a green salad. It has a real tang which was a nice change. I think next time I will use toasted walnuts. Overall a good recipe and will make again.

    Great way to kick off the new year! This was a great recipe with lots of flavor. My husband really enjoyed it as well. Bet it gets better the next day. Would make this to entertain at a summer BBQ. Loved the wild rice, red onion, pistachios and basil together..

    This salad was delicious and the dressing complimented it perfectly. Didn't put all the dressing on at once. My husband loved it and wanted more. Thanks for such a great show Ellie.
