Classic Spaghetti Carbonara

Ingredients

  • 1/2 pound bacon, chopped
  • 1 tablespoon chopped garlic
  • Freshly ground black pepper
  • 1 pound fresh spaghetti, cooked al dente
  • 4 large eggs, beaten
  • Salt
  • 1 cup freshly grated Parmigiano-Reggiano
  • 1 tablespoon finely chopped fresh parsley leaves

Directions

In a large saute pan, over medium heat, cook the bacon until crispy, about 6 minutes. Remove the bacon and drain on paper towels. Pour off all of the oil except for 3 tablespoons. Add the garlic. Season with black pepper. Saute for 30 seconds. Add the crispy bacon and the pasta. Saute for 1 minute. Season the eggs with salt. Remove the pan from the heat and add the eggs, whisking quickly until the eggs thicken, but do not scramble. Add the cheese and re-season with salt and pepper. Mound into serving bowls and garnish with parsley.

    I had to make some changes simply because I didn't quite have everything on hand. I used 4 oz of pancetta instead of the... half a pound of bacon, and that was plenty. I used a quarter of a red onion along with the garlic. I also used gemelli pasta instead of spaghetti as I did not have any spaghetti. I forgot to get Parmesan at the store so all I had was pecorino and even though I was making a half batch I spaced that for a sec and put in all 4 eggs. At the last minute I put in some frozen peas and it was really good. Even though I had to make some changes, the outcome was really good and there were rave reviews all around.Read more

    Magnifico! How to Keep the Eggs from Scrambling

    As most chefs say, simple is best. Here, simple bacon and eggs spaghetti transforms into classy spaghetti carbonara , and... this recipe couldn't be easier. For anyone who wants to know how to keep the eggs from scrambling, here's a hint. Let the eggs become room temperature if you can. Then, whisk the eggs by themselves in a bowl prior to adding the garlic to the pan so that the eggs are ready. After cooking the garlic for 30 seconds, add the bacon and spaghetti to the pan, and turn the spaghetti for 15 seconds to heat through. Take the pan off the heat, and add the spaghetti combination to a large bowl. Pour the eggs over the spaghetti mixture, and fold the spaghetti quickly into the eggs for about 20 seconds. Fold the parmesan into the spaghetti, and voila! The result is a creamy yellow sauce worthy of 5 stars.Read more

    Been looking for a quick and easy carbonara meal and this proved to be the one. Added onion and red pepper flakes, but will... probably adjust a few things along the way, such as decreased size since it is just my wife and me, and some green peas - gotta figure that one out. SY from Chino Hills, CA - I had a problem with understanding the whisking thing myself, then I learned. This note may be a little late, but the whisking just means taking a fork, or equivalent, and then stirring real quick so the egg coats the noodles instead of coagulating and then becoming scrambling eggs. In other words, stir, really quick, it won't be easy, but well worth it! Read more

    My husband and I just enjoyed this delicious dish! Because I was afraid of making scrambled eggs (instead of carbonara), I... removed the pan from the heat immediately after cooking the garlic (one step early). There was enough heat to stir in the pasta and bacon and then the eggs (without scrambling them). This recipe is a keeper, and we're quite particular about our food.Read more
