Classic Spaghetti Carbonara

Ingredients

  • 1/2 pound bacon, chopped
  • 1 tablespoon chopped garlic
  • Freshly ground black pepper
  • 1 pound fresh spaghetti, cooked al dente
  • 4 large eggs, beaten
  • Salt
  • 1 cup freshly grated Parmigiano-Reggiano
  • 1 tablespoon finely chopped fresh parsley leaves

Directions

In a large saute pan, over medium heat, cook the bacon until crispy, about 6 minutes. Remove the bacon and drain on paper towels. Pour off all of the oil except for 3 tablespoons. Add the garlic. Season with black pepper. Saute for 30 seconds. Add the crispy bacon and the pasta. Saute for 1 minute. Season the eggs with salt. Remove the pan from the heat and add the eggs, whisking quickly until the eggs thicken, but do not scramble. Add the cheese and re-season with salt and pepper. Mound into serving bowls and garnish with parsley.

    My husband and I just enjoyed this delicious dish! Because I was afraid of making scrambled eggs (instead of carbonara), I... removed the pan from the heat immediately after cooking the garlic (one step early). There was enough heat to stir in the pasta and bacon and then the eggs (without scrambling them). This recipe is a keeper, and we're quite particular about our food.Read more

    SY, If your having problems with your eggs becoming scrambled, put about 1/2c warm pasta water in the eggs before adding them... to the pan, this will 'temper' them and help keep from scrambling.Read more

    Once you get all the ingredients together the cooking process is really fast. I love that this doesn't use heavy cream but... instead the protein of eggs and some cheese to bind it. I added fresh chopped rapini, beet greens and peas to the recipe to have some crunch, bitter and sweetness. I basically used what needed to be picked from my garden. If you add them, do so before you add the eggs and pasta back so the greens cook a little. This is the kind of meal that makes a huge splash with people because of the homey, warm flavors. It's also something we often have the ingredients for in our pantry so it's a throw-together. Eggs, bacon, pasta, garlic? no problem! It's great for a party if you have a salad prepared, or awesome if you halve it and share it on a date. Have one bowl of salad, (we made a fresh lettuce, orange segment with lemon-honey vinaigrette). If you want to be romantic, have two large bowls, two sets of forks and take turns eating pasta from one bowl, salad from the other. Amazing tastes together. Really romantic? just have one fork for each :)Read more

    I saw Emeril make this on one of his shows. It wasn't the one with an audience. Anyway, he added shallots and red chili... pepper flakes and that was what I did. It came out delicious. I make this regularly for my family and they love it. It is so easy to make, even someone working the pan for the 1st time can do this. Read more
