I love this recipe!! I have used it so, so often. Tonight I used it in emerils bayou chicken pasta. It was zippy, but very good. I use the essence on everything... chicken, fish, and pork. If you like spicy seasonings, it is worth having this on hand.

Thank you Emeril for sharing your Essence recipe with us! It has become a staple in our house and we enjoy it in many dishes including fish, pork and poultry. I make my own with the best available ingredients and will continue to do so for years to come. I follow your recipe "as is" with the exception of the cayenne, instead of a tablespoon I use a teaspoon because the youngests in our household are sensitive to the heat, but we all love it!!!

this is not the same as the store bought stuff at all. This is way way hotter. Anyway I use store bought all the time but I'm going to try this again with less Cayenne. Anyone use smoked paprika? I'm going to try that.
