  • 1 1/2 cups seeded, diced tomatoes
  • 1/4 cup diced red onion
  • 1 tablespoon diced jalapenos
  • 1 tablespoon minced garlic
  • Juice of 2 limes
  • 2 tablespoons cilantro, plus extra for garnish
  • Salt and pepper

Directions

In a bowl combine all ingredients.

    Why does Emeril add garlic to everything?? Recipe was fine until you ruined it with garlic.
    In Mexico, garlic is never used. In Texas and California, garlic is rarely used.
    Garlic seems to be used in areas without genuine Mexican food!

    Very good but be careful with the lime. If you're using lime juice from the bottle instead of fresh squeezed, half the amount to taste.
