The toasty combination of panko, sesame seeds and sweetened coconut on a nugget of fried chicken is addictive. Pineapple and cucumber hit home those fresh tropical vibes, but bell pepper or mango would be delicious as well.
Cut 1 pound skinless, boneless chicken breasts into 1-inch chunks. Toss with 1 tablespoon soy sauce and a pinch each of salt and pepper. Coat with flour, dip in beaten egg, then press in a mix of 1 cup each panko and sweetened shredded coconut and 3 tablespoons sesame seeds. Fry in 350°F vegetable oil, 3 to 4 minutes. Drain on a rack; sprinkle with salt. Thread onto skewers with cucumber and pineapple chunks. Serve with sweet chili sauce.
