Just-Add-Water Instant Grits with Coconut and Cherries

Who knew grits could be sweet? We are in love with this easy-to-make instant-grits cup. Just prep the night before, add hot water, wait[ a few minutes and eat!]

Ingredients
  • 1/3 cup instant grits
  • 2 tablespoons coconut milk
  • 2 tablespoons dried cherries
  • 2 teaspoons pistachios, roughly chopped
  • 1 1/2 teaspoons light brown sugar
  • Pinch ground cardamom
  • Pinch ground ginger
Directions
  • Special equipment: an 8-ounce lidded heat-safe container

  • Put the grits, coconut milk, cherries, pistachios, brown sugar, cardamom and ginger in the container. Secure the lid, and refrigerate up to overnight.

  • When ready to eat, add 1/2 cup boiling water, stir gently and cover until the grits are tender and creamy and the cherries have plumped up, about 2 minutes. Stir again, and eat warm.
