Peach Cobbler

Ingredients

Cobbler filling:

  • 4 cups peeled and sliced fresh peaches (blanch in boiling water for 30 seconds to remove the skins)
  • 3/4 cup brown sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla
  • 1 tablespoon flour

Cobbler crust:

  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 3 tablespoons brown sugar
  • 4 tablespoons unsalted butter, cut into small pieces
  • 2/3 cup buttermilk
  • 1 tablespoon brown sugar, for topping
  • Whipped cream

Directions

Preheat the oven to 425 degrees F.

Generously butter a 1 1/2-quart shallow baking dish. Place the sliced peaches in the dish and sprinkle with brown sugar, cinnamon, vanilla, and flour. Mix gently and spread evenly again. Bake for 10 minutes.

Meanwhile combine all dry ingredients for cobbler crust in a bowl. Cut in the butter with a pastry cutter or your fingers, to make the texture like coarse crumbs. Add buttermilk and stir to form a soft dough.

Remove fruit from oven and drop rounded spoonfuls of dough on top. Sprinkle with last tablespoon of brown sugar and return to oven. Bake until fruit is bubbly and crust topping is golden brown, about 20 minutes. Serve warm with whipped cream.

    FIRST PEACH COBBLER

    Since this was going to be my first attempt I looked at several recipes and then read the comments & reviews, which was... helpful. The only thing I did differently to the fruit mixture was to add 1 tsp lemon. I forgot to add the flour though and I guess that would have made the syrup a little thicker, but still it was very tasty. For the cobbler crust I liked someone's idea of using 1/4 C quick cooking oats to the 3/4 C flour but I found the batter too runny so added more flour until it seemed like the right consistency. I found the 1 1/2 qt dish to be too small and had to use a 3 qt.dish. My fresh peaches were extra large The topping turned out great! The dough really did look like cobblestones! You could smell the cinnamon sprinkled on top Very nice!!     Too much cinnamom - cooks too long

    The cinnamon was too overwhelming to the peaches. I didn't have a problem with the amount of buttermilk, though the cobbler... topping wasn't exceptional compared to some I've made. The initial 10 minutes cooking is probably not needed, because peaches became mush. My peaches were ripe. Maybe if the peaches were very firm, this would be OK. Too much cinnamon ruins things like this if you actually want to taste the peaches. I'd half it and add a little nutmeg next time. Read more

    First thing you learn from a Food Network recipe box.................check out the reviews before making. As... USUAL.........UNEDITED DIRECTIONS!!!!!! Thanks to all who realized that was waaaaaaaaaaaaaaaaaaay too much buttermilk. I feel sorry for the inexperienced cook who didn't pick that up! That being said, this was a nice quick & easy cobbler. I do prefer Paula's recipe but this made half of what hers does [I'm the only one who likes cobbler in my house] & let me use up some buttermilk I had on hand - I used 5 TBL for the wet ingredient. I also my own frozen peaches from last summer with lots of juice in them, used half Splenda/half brown sugar, & omitted the sugar sprinkle on top. Paula's biscuit is softer, more mushy where this is more crunchy topped.........like a biscuit with shortcake consistancy........both great recipes. I will make this again when it's just for me.Read more
