Ingredients
- 1 small onion, chopped
- 1 green pepper, diced
- 1 cup sliced mushrooms, sliced
- 2 cups clams, chopped
- Ritz Crackers
- 1/2 cup butter
- Salt, pepper and crushed garlic, to taste
- Lemon wedges, for garnish
Directions
Saute chopped onions, diced pepper and sliced mushrooms in 1/4 cup butter. Add to chopped clams, and season with salt, pepper and garlic.
Add the clam mixture to crushed Ritz crackers and 1/4 cup of melted butter until the mixture holds together but is not too greasy.
Stuff the clam shells with the mixture and bake for about 15 minutes at 350 degrees.
Garnish with a lemon wedge.

I have now made this a few times- following the recipe- they really are easy to make and taste sooo much better than the store bought ones! Now I am playing with the recipe some- I changed the onions to shallots, pepper to peppadew peppers, no mushrooms but I mince the garlic into the onion/pepper mix- I also sauteed them up in garlic infused olive oil and the butter- used panko style bread crumbs and a few dashes of Frank's Red Hot- they came out awesome!

This was a hit with my harshest critic-my boyfriend! I followed the recipe to the letter with one exception-I only used a cup instead of the 2 cups of clams in the recipe but it still turned out great.
