Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 pound blue cheese
  • Kosher salt
  • Freshly ground black pepper
  • 2 tablespoons olive oil
  • 1 stick unsalted butter
  • 2 tablespoons hot sauce (recommended: Frank's Hot Sauce)
  • 2 tablespoons white vinegar
  • Celery, sliced thin, to serve

Directions

Heat the oven to 350 degrees F.

Using a sharp knife, cut a pocket into each chicken breast. Stuff 1/4 of the blue cheese into each breast. Secure the openings with toothpicks and season with salt and pepper. Heat the oil in a nonstick, oven-proof skillet over medium heat and sear the chicken on both sides until browned, about 3 to 4 minutes per side. Put the chicken into the oven until it is cooked through, about 8 to 10 minutes.

In a small pot, add the butter, hot sauce, and white vinegar and cook over medium heat until bubbling. Pour half the sauce over the hot chicken and cook over medium heat for 1 minute. Remove the toothpicks and serve with extra sauce garnished with sliced celery.

    This is the best . I did not have blue cheese so I used blue cheese dressing, and used two skinless brests. Pounded one and... put a pocket in the other filled the pocket with blue cheese dressing, spread blue cheese dressing on the pounded one rolled it up browned them and plced them in the oven till they were done .Quick and easy.I ate both of them.Read more

    I pounded the breasts thin and added the crumbled blue cheese in the center-then rolled up and dipped in egg and toasted... bread crumbs sealing the cheese inside. This helped the cheese to stay in better. Cooked initially in olive oil and butter mixture on stove top to brown; finished in oven. We made the sauce with the amount of butter called for, but doubled the rest of the ingredients. (used a spicey wing sauce and tobasco combo) and it turned out very flavorful.     I'm extremely grateful for this recipe. It has ALL the taste of our beloved Buffalo Chicken wings with a fraction of the fat.... We made it for two, so cut the butter down to about two tablespoons which was plenty. Also added several shakes of original tabasco for more heat (Franks has a great flavor, but virtually no kick). Vinegary, blue-cheesy, spicy, relatively guilt-free and utterly delicious. Also looked great on the plate. This was an instant classic and is destined to be a regular for us.     Great Recipe...Can't Wait For Superbowl!

    This recipe was GREAT! The chicken didn't require a lot of seasoning because the blue cheese and sauce added so much flavor.... However, the suce in my opinion was a FLOP. Waaaaaayyyyyy too much butter, not enough hotness. I ended up using an entire 8oz bottle of Frank's Red Hot, and the sauce was still extremely oily and separated. Still, I'm in LOVE with this recipe.     This recipe had great flavor, but the chicken took longer to cook than the instructions indicated. As a result, the cheese... slowly 'oozed' out as it cooked. Next time I might consider pounding the chicken breasts down a bit to make them cook faster (?). But I will definitely try this one again.Read more
