Try saying that 3 times in a row! This one I just had to name after my mother, because she made it for me every time I had a cold. Stracciatella is best described as an Italian egg drop soup. It takes only minutes to make and is naturally low carb. Ciao down, bella!

Directions

Bring the stock to a simmer in a medium saucepan.

With a whisk, mix the eggs and Parmesan cheese together in a bowl. Make sure the stock is not boiling and slowly pour in the egg and cheese mixture. Wait a minute for the eggs to just set. Gently stir in the parsley, slightly breaking up the cooked egg. Turn off heat and season with salt and pepper. Divide among bowls and serve immediately.

    This was an amazing soup and my whole family loved it!!! I added a bit of chicken along with spinach...this is a keeper and will be added to our rotation!!

    I love straciatella. I tried this recipe but with a twist: My boyfriend wanted to add some small pieces of fresh chicken to the broth and we did. When the soup was ready, I turned off the heat and added spinach leaves on top right before serving to soften them a little. I served the straciatella with the spinach leaves on top and grated some fresh parmesan cheese and top of the leaves. (This is how they serve it in an Italian restaurant I love. The outcome was wonderful: light, tasty and comforting. It is certainly one of our favorite soups!

    Made this soup for the first time. It was very good. But, since my wife and I are on diets, I tried it with EGG WHITES. Just as good (my opinion if not better. Give it a try. I think you will LOVE IT!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!
