"Mock" Garlic Mashed Potatoes

Ingredients

  • 1 medium head cauliflower
  • 1 tablespoon cream cheese, softened
  • 1/4 cup grated Parmesan
  • 1/2 teaspoon minced garlic
  • 1/8 teaspoon straight chicken base or bullion (may substitute 1/2 teaspoon salt)
  • 1/8 teaspoon freshly ground black pepper
  • 1/2 teaspoon chopped fresh or dry chives, for garnish
  • 3 tablespoons unsalted butter

Directions

Set a stockpot of water to boil over high heat.

Clean and cut cauliflower into small pieces. Cook in boiling water for about 6 minutes, or until well done. Drain well; do not let cool and pat cooked cauliflower very dry between several layers of paper towels.

In a bowl with an immersion blender, or in a food processor, puree the hot cauliflower with the cream cheese, Parmesan, garlic, chicken base, and pepper until almost smooth.

Garnish with chives, and serve hot with pats of butter.

Hint: Try roasting the garlic and adding a little fresh rosemary for a whole new taste.

    I made this recipe almost exactly as written. The only thing I did differently and would recommend to anyone, is as the... cauliflower was boiling I melted the butter in a small sauce pan over low heat with the minced up garlic to take the edge of the garlic, rather than just blending it in raw. Oh, and I also used a vegan no MSG boullion cube in the water I boiled the cauliflower in. My mom and my husband loved this recipe. It will be a new menu staple for sure. Thanks George!Read more

    I am a TOTAL meat and potatoes guy. I think I like these better than potatoes. 1) they are healthy ..I subsitute some... prepared horseradish for the butter to make them even more so. 2)they reheat perfectly without all that starch of potatoes. 3) clean up is a breeze due to no starch. 4) SO simple to make. Hint, do NOT omit the chives. Also, I thin with some chicken stock if its too thick. No one will believe how good these are, and with the horseradish, they may just think they are potatoes! Read more

    George nailed it! You have to try this recipe! It's fast and easy. Mashed potatoes are one of my favorite foods, and I am... very picky about the taste. This recipe surpasses my ideal of what great mashed potatoes should taste like. I love it, and is now one of my favorite dishes, along with his recipe for mock potato salad.     It was very flavorful. Me (a 16yo kid) and my parents liked everything about it. However my pickier older sister was not a... fan of the texture, so if you have some picky non-vegetable fans I would maybe suggest making it a little creamier.Read more
