Ingredients
- 1 medium head cauliflower
- 1 tablespoon cream cheese, softened
- 1/4 cup grated Parmesan
- 1/2 teaspoon minced garlic
- 1/8 teaspoon straight chicken base or bullion (may substitute 1/2 teaspoon salt)
- 1/8 teaspoon freshly ground black pepper
- 1/2 teaspoon chopped fresh or dry chives, for garnish
- 3 tablespoons unsalted butter
Directions
Set a stockpot of water to boil over high heat.
Clean and cut cauliflower into small pieces. Cook in boiling water for about 6 minutes, or until well done. Drain well; do not let cool and pat cooked cauliflower very dry between several layers of paper towels.
In a bowl with an immersion blender, or in a food processor, puree the hot cauliflower with the cream cheese, Parmesan, garlic, chicken base, and pepper until almost smooth.
Garnish with chives, and serve hot with pats of butter.
Hint: Try roasting the garlic and adding a little fresh rosemary for a whole new taste.

Love the mock garlic mashed potatoes! I lightly sautéed the garlic in olive oil before I blended it. The consistency is different, but not bad! Great flavor. Perfect for my Weight Watcher's plan. Saved myself about 3 points! I'm such a carb lover, but I don't miss it with this great substitute!

These were pretty tasty, but the texture was a little off for my family. I would also recommend cutting down the garlic a bit. I used a suggestion I read on here for steaming the cauliflower instead of boiling it which resulted in not having to dry the cauliflower with paper towels at all. I will probably use this recipe again, but I think I might try roasting the garlic first.

I gave this five stars because the taste was very good, however if you are looking for a "true" mashed potato consistency you will be disappointed. My family loved it and with the new low carb diet we are all on...this was excellent! Served with meatloaf and green beans and it was a hit...packing the leftovers for lunch tomorrow.
