Ingredients

  • 3 tablespoons olive oil
  • 2 carrots, peeled and chopped
  • 1 small onion, chopped
  • 1 clove garlic, minced
  • 1 (26-ounce) jar marinara sauce (recommended: San Marzano brand)
  • 2 (14-ounce) cans chicken broth
  • 1 (15-ounce) can cannellini beans, drained and rinsed
  • 1/2 teaspoon red pepper flakes
  • 1/2 cup pastina pasta (or any small pasta)
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper

Directions

Warm the olive oil in a large soup pot over medium-high heat. Add the carrots, onion, and garlic and saute until soft, about 2 minutes. Add the jar of marinara sauce, chicken broth, cannellini beans, red pepper flakes, pasta, salt and pepper. Simmer for 10 minutes. Ladle into bowls and serve.

    It was so good, I could not stop eatiing it, and I do not normally eat soup esp. tomato . I added a little more red peper... flakes than it called for, and it made it so spicy. I also added bowtie pasta just becaue I like bigger pasta. Thanks GIada!!Read more

    Even if you don't like tomato soup, you'll love this recipe. It's the best out there. The soup is quite thick, so I added 1... extra can of chicken broth. It was perfect. Or, you can add 1/2 the amount of pasta and get the same result. I also used 1/2 the amount of chili flakes, just the right amount of spice for our family. A grilled cheese sandwich, and this tomato soup are a home run!! Thanks Giada!!Read more

    This tomato soup was the first I ever made and it was delicious! Instead of using jar sauce, I made my own quick marinara. I... sauteed a couple cloves of garlic in olive oil, added a 28oz can of crushed tomato, sea salt, pepper and oregano to taste and let it simmer for about 15 minutes while I cooked the pasta. I served it with garlic bread and it was great; my fiance really enjoyed it, especially on a cold night. Thanks Giada!Read more

    We've added this to our regular repertoire. It is super easy to make. We, too, make it Paul Newman's marinara and sometimes... use great northern beans when I can't find cannelini beans. We also like to add meat sometimes, some italian sausage or cooked shredded chicken. It's great with some Texas Toast or cheesy garlic bread for dipping!Read more
