Ingredients

  • 3 tablespoons olive oil
  • 2 carrots, peeled and chopped
  • 1 small onion, chopped
  • 1 clove garlic, minced
  • 1 (26-ounce) jar marinara sauce (recommended: San Marzano brand)
  • 2 (14-ounce) cans chicken broth
  • 1 (15-ounce) can cannellini beans, drained and rinsed
  • 1/2 teaspoon red pepper flakes
  • 1/2 cup pastina pasta (or any small pasta)
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper

Directions

Warm the olive oil in a large soup pot over medium-high heat. Add the carrots, onion, and garlic and saute until soft, about 2 minutes. Add the jar of marinara sauce, chicken broth, cannellini beans, red pepper flakes, pasta, salt and pepper. Simmer for 10 minutes. Ladle into bowls and serve.

    This is BY FAR my most FAVORITE SOUP! I've been making this in double batches and it never seems to last! My husband and I... cannot get enough of this soup, I always have to have ingredients on hand!     This soup is so quick and so amazingly yummy. I put the carrots, garlic and onions in a food processor and made it even more... easy! Also I substituted the chicken stock with veggie stock. Paired it with grilled cheese on crunch Italian bread..mmm.. It was so good there were no left overs :( The next day I made more but doubled the recipe for freezing!     I love making this dish not only b/c it's super easy but also b/c you can do so much more to it than what's called for in the... recipe. I've added italian squash, italian sausage, and celery. It's also good with cheese sprinkled on top or plop a chunk of mozzarella in it. Yum!Read more
