Oven Roasted Broccoli

Ingredients

  • 1 pound broccoli, rinsed and trimmed
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/3 cup panko bread crumbs
  • 1/4 cup finely grated Parmesan or sharp Cheddar

Directions

Preheat oven to 425 degrees F.

Cut the broccoli florets into bite size pieces. Cut the stalk into 1/8-inch thick, round slices. Place the broccoli into a mixing bowl and toss with the olive oil, garlic, kosher salt and pepper and set aside.

Spread the panko into a 13 by 9-inch metal cake pan and place into the oven for 2 minutes or until lightly toasted. Remove the panko from the oven and add to the bowl with the broccoli mixture. Toss to combine. Return the mixture to the cake pan, place in the oven and roast just until the broccoli is tender, 8 to 10 more minutes. Remove from the oven, toss in the cheese and serve immediately.

    I've tried many different ways to make broccoli in the hopes of getting my kids (3 and 1 year old) to choke it down and this... is the first thing they've ever liked. The one year old, who is a ridiculously fussy eater, asked for more! Even my husband had seconds and he is often suspicious of cooked vegetables. I was amazed that adding such a few ingredients could really make me enjoy broccoli again. To save on fat, I have switched to using only half of the recommend amount of oil with no noticeable change in flavor at all.     Wonderful with less pepper!

    I love this recipe, it looked great when we saw the show (it's our favorite to watch after our daughter goes to bed, then... Iron Chef...guess we just like Alton Brown lol). I used regular breadcrumbs since the grocery store close to our house doesn't carry them sadly. It worked out just as nicely, but I found it a little too peppery for my taste. Besides that it was phenominal, my 16 month old loved it more than the spaghetti we had as a main course with it. Glad I tried it, it was beyond easy to make and easiest clean-up I've had in a long long time, one bowl and one pan plus a spatula (use a heat restitant bowl with lid and it doubles as container for fridge).
