Ingredients

  • 3 tablespoons canola oil
  • 1 red onion, minced
  • 1 jalapeno, seeded, minced
  • 1 green bell pepper, minced
  • 1 red bell pepper, minced
  • 2 tablespoons garlic, minced
  • 1 cup Roma tomatoes, diced
  • 3/4 pound ground beef or turkey
  • 2 cups long-grain rice
  • 8 ounces kidney beans
  • 2 cups chicken stock
  • 1 1/2 cups water
  • 1 teaspoon paprika
  • 1 tablespoon chili powder
  • 1 tablespoon salt
  • 1 teaspoon freshly ground black pepper
  • 3 tablespoons green onion, sliced, for garnish

Directions

In medium stock pot over medium heat, add oil, onions and peppers and saute until translucent. Add the garlic, tomatoes and ground beef. Cook until meat is browned.

Add rice to mixture and cook over low heat for 3 minutes, coating rice with the oils from the pan. Add beans, chicken stock, water and seasonings, bring to a simmer, then cover and cook on low for 20 minutes.

Fluff with fork and garnish with green onions.

    I added some cumin, Mexican oregano, a can of Rotel drained, Tabasco chipotle sauce, and I used poblanos instead of bell... peppers and beer instead of water. We topped it with cheese and served with corn cakes. Thanks Guy great recipe!Read more

    The First time i tried this recipe my rice was under cooked and the dish had no flavor. Now i believe i've mastered this... recipe!! the trick to really flavoring this dish is to add the seasonings while the rice is browning. I use a large packet of chili seasoning along with smoked paparika, 2 palms full cumin, 2 bay leaves, Black Pepper and Sea salt!. once the rice is good and seasoned add the liquid, i use 4 cups chicken stock. Make sure the rice is completely coverd under stock. 20 mins on low no peeks!! after 20 min take pot off heat but keep covered for about 10 mins. Then here's the kicker!!! add fresh chopped celantro to pot and mix!! You'll love it!!Read more

    Delicious dish but misssing something

    I made this dish for a family BBQ and everyone really liked it. I though felt it was missing some depth of flavor even though... it had alot of good flavors going on. I added some extra chili seasoning, jalapeno sauce & hot sauce but can't quite figure out what else it needs to be REALLY good. Next ime I may put in some taco seasoning and top it with cheese to make it more of a Mexican style rice. I will definitely make it again but it is missing something, I hope I can figure it out.Read more
