Ingredients
- 3 tablespoons canola oil
- 1 red onion, minced
- 1 jalapeno, seeded, minced
- 1 green bell pepper, minced
- 1 red bell pepper, minced
- 2 tablespoons garlic, minced
- 1 cup Roma tomatoes, diced
- 3/4 pound ground beef or turkey
- 2 cups long-grain rice
- 8 ounces kidney beans
- 2 cups chicken stock
- 1 1/2 cups water
- 1 teaspoon paprika
- 1 tablespoon chili powder
- 1 tablespoon salt
- 1 teaspoon freshly ground black pepper
- 3 tablespoons green onion, sliced, for garnish
Directions
In medium stock pot over medium heat, add oil, onions and peppers and saute until translucent. Add the garlic, tomatoes and ground beef. Cook until meat is browned.
Add rice to mixture and cook over low heat for 3 minutes, coating rice with the oils from the pan. Add beans, chicken stock, water and seasonings, bring to a simmer, then cover and cook on low for 20 minutes.
Fluff with fork and garnish with green onions.

Easy and Great! I also used more stock instead of water and used black beans instead of kidney beans.

Such an easy and delicious recipe. I used ground turkey and instead of water I used extra vegetable stock I had on hand. It was so flavorful and aromatic. This is going into regular rotation at my house.

This was very easy to make and very tasty. I'd give it 4.5 stars if I could. I saved some time by using frozen onions and peppers, and canned tomatoes, it turned out great! I used long-grain Jasmine rice, which gave it a wonderful aromatic flavor, moreso than plain white rice. I also used chicken broth instead of the extra water. Used black beans instead of kidneys. Don't skip or skimp on the beef. You don't really notice it's there, but it gives the rice body and flavor. Don't worry about it being too filling or too much meat if you're planning to make it for a side dish. It's kind of like the beef in cajun rice - necessary, but not the main star. Oh, and I put it in a crockpot to keep it warm for the potluck I took it to. Rave reviews and lots of people asking for the recipe.
