Ingredients
- 6 heirloom tomatoes, assorted sizes and colors
- Sea salt
- Red wine vinegar
- Bunch of tarragon
- Freshly ground black pepper
Directions
Cut the large tomatoes in thick slices and the small ones in wedges. Arrange the tomatoes on a platter and sprinkle generously with sea salt.
Drizzle red wine vinegar all over the tomatoes.
Using scissors, clip the tarragon leaves over the salad, sprinkle with pepper and drizzle with more red wine vinegar. Allow to sit for 10 minutes and serve at room temperature.

I have wanted to try Heirloom Tomatoes for a while now. I finally bought some the other day and found this recipe. I did use dried tarragon because that is what I had on hand. I was very pleased. They were awesome :

No heirlooms, just 3 kinds of regular old grocery store tomatoes. Fabulous and fresh ! Unless you really, really hate tomatoes, this is the best way to serve them.

I made this salad last Mother's Day with a variety of Heirloom Tomatoes - different sizes and colors and cut them differently, as wedges, slices, in half, etc. It was the best ever! And just beautiful. So fresh tasting. Just amazing!
