Ingredients
- 1 pint vanilla ice cream
- 1/2 cup hot brewed espresso
Directions
Place 3 scoops of the ice cream in each of 2 bowls. Pour the espresso over the ice cream and serve immediately.
Note: To make espresso for this recipe in your electric drip coffee maker, use 1/3 cup of ground espresso and enough water for 4 cups of coffee.

Simple. Perfect. I served it as an ending to a dinner party. Bites were taken and a silence settled over the table, then you'd hear, "mmmmmm", and various grunts of pleasure. Hard to believe something this easy is this good. Be sure to use good quality vanilla ice cream (mine was homemade. I used espresso grounds in a standard electric drip coffee maker, and it worked perfectly for this purpose. I topped it with a sprinkle of chopped chocolate-covered espresso beans.
