Ingredients

  • 6 slices good country white bread, crusts removed and toasted
  • 4 ounces goat cheese
  • 4 ounces baby arugula
  • 2 medium tomatoes, sliced

Directions

Lay out the toast slices and spread them with the goat cheese. Place the arugula and sliced tomato on top of the goat cheese, and serve.

    Delicious. All you have to do if you don't want messy Arugula is to put it underneath the tomatoes. So good. Ina is the best!

    I made these for a party as appetizers and I really enjoyed the flavor and how easy it was. I did put just a hint of olive oil on the arugula and tossed with salt and pepper. The arugula can be a little messy (falls off if you put too much on the toast. I also made tartines with avocado (like a chuncky spread, turkey ***** and havarti with dill. Yum. I liked it so much, I made it for lunch the next day with the leftover ingredients.

    My family really enjoys this dish. We have also tried it using french bread, and it was just as tasty. My children prefer this dish with baby spinach than the arugula. Thanks for such an easy and enjoyable dish!
