Ingredients

  • 3/4 pound (3 sticks) unsalted butter, at room temperature
  • 1 cup sugar
  • 1 teaspoon pure vanilla extract
  • 3 1/2 cups all-purpose flour
  • 1/4 teaspoon kosher salt
  • 1 egg beaten with 1 tablespoon water, for egg wash
  • 7 ounces sweetened flaked coconut
  • Raspberry and/or apricot jam

Directions

Preheat the oven to 350 degrees F.

In an electric mixer fitted with the paddle attachment, cream together the butter and sugar until they are just combined and then add the vanilla. Separately, sift together the flour and salt. With the mixer on low speed, add the flour mixture to the creamed butter and sugar. Mix until the dough starts to come together. Dump on a floured board and roll together into a flat disk. Wrap in plastic and chill for 30 minutes.

Roll the dough into 1 1/4-inch balls. (If you have a scale they should each weigh 1 ounce.) Dip each ball into the egg wash and then roll it in coconut. Place the balls on an ungreased cookie sheet and press a light indentation into the top of each with your finger. Drop 1/4 teaspoon of jam into each indentation. Bake for 20 to 25 minutes, until the coconut is a golden brown. Cool and serve.

    Dough was easy to make; the hint to refrig in a rectangle and then cut into equal portions is a great idea! I made these with... my 3-year old and the precut portions would have been easier for us both! After, making the indent, I did tap the sides in to close any cracks/gaps created by making the dent.     I did not put coconut on the cookie as I prefer to sprinkle with powdered sugar after baking. This is a wonderful recipe.

    I knew I shouldn't have strayed from my old-timey thumbprint recipe.... Alas but I did want to try a pure shortbread version.... Ina's an awesome cook/baker so it was worth a shot. Oh...one tip. When you chill the dough press it into a rectangle rather than a disc shape.....wrap, chill. Pull out of frig and then cut it with a sharp knife into one inch or so sized squares....just as you would cut brownies etc... It will give you the 32 to 36 squares that then are way easier to roll into balls as it's pre-portioned. Personally -- and I know it's all about personal preference.... I did not like my shortbread cookie jazzed up. Maybe I'm a purest -- but shortbread doesn't need all these gummy and chewy additions added. Shortbread is what it is buttery and delicious...melt in your mouth. Now you have jam that has been baked for half an hour or so on top! That yielded in my house a gummy gnarly chewy bit of preserves on top. The coconut is also a chewy bit as well. I did 1/3 batch in walnuts and 1/3 in almonds and the last 1/3 in coconut. No one liked the coconut. So next year I'll do as I always have and use a thumbprint recipe that has eggs in it -- like a real cookie and add my jelly or jam after they are out of the oven for that delicious fruity taste and lovely texture it addsl I probably shouldn't' have tried this recipe - my bad - but many people like it and that's what's important in the end.Read more

    I was skeptical of jam thumbprint cookies with coconut, but these were delicious. I used raspberry preserves. Following the... recipe precisely (I even measured the balls of dough just to check the recipe quantities) resulted for me in perfect dough and then 40 cookies that were as good as the reviews said they would be. Next time, I will make the cookies smaller and will probably have 60+ cookies.Read more

    Dry and stuck to pan

    I typically LOVE everything from Ina Garten but these were disappointing. I found the dough cracked on the sides when I put... them on the pan. The recipe also said to place them on UNgreased cookie sheets so I did and mine stuck. A lot of extra work with the egg dip and coconut dip and not worth the effort, dry as can be. Sorry.Read more
