Ingredients

  • 1 pound unsalted butter
  • 1 pound plus 12 ounces semisweet chocolate chips
  • 6 ounces unsweetened chocolate
  • 6 extra-large eggs
  • 3 tablespoons instant coffee granules
  • 2 tablespoons pure vanilla extract
  • 2 1/4 cups sugar
  • 1 1/4 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 3 cups chopped walnuts

Directions

Preheat the oven to 350 degrees.

Butter and flour a 12 x 18 x 1-inch baking sheet.

Melt together the butter, 1 pound of chocolate chips, and the unsweetened chocolate in a medium bowl over simmering water. Allow to cool slightly. In a large bowl, stir (do not beat) together the eggs, coffee granules, vanilla, and sugar. Stir the warm chocolate mixture into the egg mixture and allow to cool to room temperature.

In a medium bowl, sift together 1 cup of flour, the baking powder, and salt. Add to the cooled chocolate mixture. Toss the walnuts and 12 ounces of chocolate chips in a medium bowl with 1/4 cup of flour, then add them to the chocolate batter. Pour into the baking sheet.

Bake for 20 minutes, then rap the baking sheet against the oven shelf to force the air to escape from between the pan and the brownie dough. Bake for about 15 minutes, until a toothpick comes out clean. Do not overbake! Allow to cool thoroughly, refrigerate, and cut into 20 large squares.

    I used all milk chocolate and a little unsweetened cocoa for that chocolate punch. I also used regular coffee grounds. This... recipe was even delicious healthy-fied - whole wheat pastry flour, fakeout light butter, and splenda. No one could tell and I couldn't walk away from the pan.Read more

    I adore Ina (met her in person--she is approachable and friendly) and have loved every recipe of hers that I've tried. ... However, the final product here was simply average. I followed the directions to a "T" and used only the finest ingredients (e.g., Scharfenn Berger chocolate, organic butter/eggs). The result was a crumbly, cake-like brownie that fell apart.     OMG Mom, These are the BEST Brownies Ever!

    I am a brownie fanatic. I've been searching for the best brownie recipe since I was a kid. I've used the Joy of Cooking... recipe up until now. That recipe sometimes comes out too cake-like. I prefer a brownie that is more fudge than brownie. I like them tall and chewy. They shouldn't be cakey at all. The crust should be crisp and crunchy on the outside, chewy and fudgy on the inside. These brownies seem to have it all. I followed the recipe very closely. I used Ghiradelli bittersweet chocolate chips and Ghiradelli unsweetened chocolate. I used instant espresso, which I reduced to 2 tbs because I was afraid it would be too strong. I didn't have instant "coffee". I also reduced the Baking Powder to 3/4 tbs to avoid too much rising. I also left out the nuts because we aren't huge nut fans, though next time I may try pecans. Then when baking the brownies, I actually put ALL the batter into a single 9X13 pan. I didn't have a larger pan. I intended to use 2 9x13 pans, but I saw that the brownies would be quite thin. Because I like them taller and chewier, I thought I'd try stuffing it all into one pan. (It was a tall cake pan, so the mix didn't overflow during baking.) I had to bake for almost 40 minutes. I pulled them out when they were well set and the center was firm, but the toothpick still came out somewhat coated. I loved the tip about rapping the pan on the shelf during baking. This made the brownies "fall" and become less cakey. 2 out of 3 of my kids said "Oh My God, Mom these are the BEST brownies ever" when they tasted them. The only thing I would change next time would be to reduce the coffee a tad and try to have semi-sweet chips instead. I would also refridgerate them after they have cooled completely.     These are indeed some of the most decadent / rich brownies ever. You will love them. Do not be intimidated by those who do... not have a cooking nack. The only issue to be wary of is the division of the chocolate chips. Save the 12 ounce portion for mixing n your flour later. (that wasn't made quite specific) All in all an expensive but great investment. Read more

    Ina's recipe is the best! I have tried recipes from Martha Stewart, Dorie Greenspan, the famous "Baked" brownie from the... cookbook of the same name, and Ina's outrageous brownies are my favorite. The instant coffee adds a subtle flavor that will have people wondering what your secret is. If you like chocolate-y chocolate, you will LOVE this recipe. The only problem I had was that the brownies spilled over the edge of the pan. I used a half sheet pan with the correct measurements. The only thing I could think of that could have caused the spillage was that I had a freshly opened can of baking powder. Would that have caused the brownies to rise just a little more than if the baking powder weren't quite as fresh? I'm not sure, but the results were worth the unexpected clean up! Read more
