Ingredients

  • 1/2 pound fusilli (spirals) pasta
  • Kosher salt
  • Olive oil
  • 1 pound ripe tomatoes, medium-diced
  • 3/4 cup good black olives, such as kalamata, pitted and diced
  • 1 pound fresh mozzarella, medium-diced
  • 6 sun-dried tomatoes in oil, drained and chopped

For the dressing:

  • 5 sun-dried tomatoes in oil, drained
  • 2 tablespoons red wine vinegar
  • 6 tablespoons good olive oil
  • 1 garlic clove, diced
  • 1 teaspoon capers, drained
  • 2 teaspoons kosher salt
  • 3/4 teaspoon freshly ground black pepper
  • 1 cup freshly grated Parmesan
  • 1 cup packed basil leaves, julienned

Directions

Cook the pasta in a large pot of boiling salted water with a splash of oil to keep it from sticking together. Boil for 12 minutes, or according to the directions on the package. Drain well and allow to cool. Place the pasta in a bowl and add the tomatoes, olives, mozzarella, and chopped sun-dried tomatoes.

For the dressing, combine the sun-dried tomatoes, vinegar, olive oil, garlic, capers, salt, and pepper in a food processor until almost smooth.

Pour the dressing over the pasta, sprinkle with the Parmesan and basil, and toss well.

    Summer Favorite

Rated: 5 stars out of 5
I make this almost every time I have company in the summertime. It's one of those dishes you can do way ahead of time. And... taste good warm, room temp. or even right from the fridge. Only thing, I would just add a tiny bit more olive oil, and even more olives. Or just remove about 1/2 cup of the pasta, because I prefer it more moist. I've bought those giant size jars of the sun-dried tomatoes and the olives to last me the entire summer. That's how much I make this and love it.Read more

    Excellent cold or warm!!!

Rated: 5 stars out of 5
I made this pasta and I couldn't wait to dig in, right from the bowl!!! I did chill it, and had it for lunch the next day at... work, and everyone wanted a bite! The flavors all are wonderful together and get better the next day. As for the salt content that was posted previously, you can always omit free salt in your recipe, since there is plenty from the olives and other ingredients. I do not have a salt restricted diet so I always add salt in recipes that call for it, it does enhance the dish. It's great to have a meatless meal once a week with recipes like this!!!Read more

I love Ina's recipes and this one is no exception. I like to serve it warm or room temperature, because you can really taste... the sweetness of the sun dried tomato dressing. This is always a bit hit at my house, and the kids love it. Go Ina!Read more

    I'm so glad for comments

Rated: 5 stars out of 5
I'm so glad that I read the comments on this recipe. I had made 1/2 pound of pasta and after reading the comments I quickly... cooked up another 1/2 pound. This would have been weird tasting if I hadn't made it with a full pound of pasta. Thank you!!Read more
