Ingredients

  • 1 1/4 pounds cashew nuts
  • 2 tablespoons coarsely chopped fresh rosemary leaves
  • 1/2 teaspoon cayenne
  • 2 teaspoons dark brown sugar
  • 2 teaspoons kosher salt
  • 1 tablespoon melted butter

Directions

Preheat the oven to 375 degrees F.

Place the nuts on an ungreased baking sheet and bake for about 10 minutes until they are warmed through. Meanwhile, combine the rosemary, pepper, sugar, salt and butter in a large bowl. Toss the warm nuts with the rosemary mixture until the nuts are completely coated. Serve warm.

    I have had this recipe for quite a while and finally made it as an appetizer when we had friends for dinner last week. They... were FANTASTIC! I was afraid of the "heat" and thought there was too much rosemary in the recipe, so cut back on the cayanne and the fresh herb. In retrospect, I will follow the recipe to the "T" next time. They were still EXCELLENT and everyone asked for the recipe. Quick and simple to make. I can see where these would make a great gift (or little hostess gift). Read more

    To make the ingredients stick better....

    My grandmother makes these for me when I come to visit, they are delicious! I tried making them a couple of times myself, but... had trouble getting the ingredients to stick to the cashews. My grandmother came up with this slight alteration:: Instead of putting all the ingredients in a bowl and then mixing in the cashews, but the warm cashews in a bowl, pour the melted butter over, and then sprinkle the ingredients over the nuts and mix with your hands. Doesn't sound like it should make a huge difference but it does for me!Read more

    Tasty nuts. They really only need to be cooked about 8 minutes. I went the full 10 but they seemed a little too brown. Maybe ... that is why the seasoning did not stick too well. Anybody know or did I just need more butter?Read more
