Dress up bowls of Roasted Tomato Bisque or your favorite tomato soup with fun star-shaped grilled cheese sandwiches.
Ingredients
- 4 slices white American cheese
- 8 slices country white bread
- 4 slices yellow American cheese
- Salted butter, softened
- Special equipment: star shaped cookie cutters in descending sizes
Directions
Preheat the griddle to medium heat.
Build the sandwiches with 1 slice of white cheese on 4 pieces of bread and 1 slice of yellow cheese on the other 4 slices of bread. Close the sandwiches and butter both sides. Place on the griddle, cover with a metal bowl and let the sandwiches get a nice golden brown, 3 to 4 minutes. Flip the sandwiches, cover again with the metal bowl and cook until the cheese is melted and the sandwiches are golden brown, another 3 to 4 minutes.
Using 4 descending sizes of star shaped cookie cutters, punch stars out of the sandwiches. Place on top of Roasted Tomato Bisque from large to small.

While I loved your tomato soup recipe, I just can't serve this version of grilled cheese to my kids. Whole wheat bread and REAL cheese are easy alternatives that I know kids will eat. The stars are cute but what do you do with the scraps? I think triangles on top of the soup can be a fun alternative (& not wasteful . Sorry Jeff.. but this one needs to be stepped up.. our kids are worth it.

Easy recipe that I have used for years. One suggestion, that makes it so much easier, butter the bread slices first, then flip them over and add the cheese slices. Also, I like to add sliced tomato, sprinkle with a little S/P and oregano. Delicious!
