These might be a social media sensation these days, but I took my inspiration from an afterschool snack I used to eat in the 1990s. I would mix equal parts cream cheese and marshmallow creme and use it as dip for my fruit. It’s delicious and addictive!
Using a paring knife, remove the top of each strawberry, cut in half lengthwise and remove the core. Pat the insides dry with a paper towel. Set aside.
In a medium bowl, beat the cream cheese and marshmallow creme together with an electric mixer on medium speed until fluffy, 1 minute.
Transfer the mixture to a piping bag or ziptop bag, snip the corner and pipe into the strawberry halves.
Garnish with grated chocolate and/or toasted coconut. Refrigerate until serving time.
