Ingredients

  • 3 tablespoons chia seeds
  • 1/2 cup sugar
  • 1 cup fresh lime juice
  • 1/4 cup fresh mint leaves, loosely packed

Directions

In a medium bowl, mix the chia seeds with 1 cup cold water. Let stand 15 minutes. Drain and rinse the seeds.

Mix 4 cups cold water and the sugar in a medium pitcher, stirring until the sugar dissolves. Add the lime juice and stir to combine. Mix in the chia seeds. Garnish with mint leaves and serve over ice.

Cook's Note: Chia seeds can be found in health food stores or natural grocery stores.

    The drink is good and I enjoyed it.
    The hardest part of preparing it was draining and rinsing the seeds after they had soaked in the water. But I did like that their consistency was like the pulp of the limes.

    When I first saw this recipe it looked a little wierd and I didn't know what chia seeds were. Then, when i went to the store to buy them it said on the package that it had more antioxidents than blueberries. When I made it, it was really good and now I put chia seeds in my water all the time.
