Ingredients

  • 2 pounds baby red potatoes, cut into 1/2-inch-thick slices
  • Salt
  • 1/4 cup (1/2 stick) unsalted butter, melted
  • 1/2 cup olive oil
  • 1 teaspoon chopped fresh cilantro
  • 1/2 teaspoon chipotle powder
  • Freshly ground black pepper

Directions

Prepare an indoor grill for direct heat cooking over medium high heat.

Cook the potatoes in a large pot of well-salted boiling water for 10 minutes (the potatoes will not be cooked through).

Mix the butter with the olive oil, cilantro, chipotle powder and 1/4 teaspoon salt in a bowl. Drain the potatoes and toss with the chipotle oil mixture. Transfer the potatoes to the grill. Grill the potatoes, covered, turning once or twice until tender, about 5 minutes total. Return the potatoes to the bowl and toss again with the chipotle oil mixture. Season with the 1 tablespoon salt and pepper. Serve warm.

Cook's Note: If you are using an outdoor grill, try use larger-size potatoes so they don't fall through the grill grate.

Great recipe! I did change the seasoning a little. I didn't have any cilantro so I didn't use it, and I only had a chipotle blend spice instead of just plain chipotle powder. I also didn't quite use as much oil because it really didn't seem to need it (I maybe only used 1.5 T but I used the same technique. I found my potatoes needed a little more time on the outdoor grill--it was probably 7-8 min. I just cooked them until they had nice grill marks. The potatoes were seriously incredible, and it was really an easy recipe. Definitely going to make this again!

Made this for the first time & really followed the recipe, especially the preparation of the potatoes before grilling. The grilling time on an indoor grill versus the time in the recipe can vary,as with my indoor grill it was approx 8 mins ,whereas recipe said about 5 minutes...but it all worked perfectly. The amount of chipotle was perfect as it gave it a nice kick yet it wasn't too powerful. The oil mixture gives the potatoes great flavor. Both a friend and mom loved them. YUMMERS! :

We followed the recipe to the letter. I was nervous that the second time through the oil mixture would make the oily but it really didn't. These were excellent. The chipotle was a nice touch as well for a little extra flavor.
