Ingredients

  • 1 cup flour
  • 3/4 cup cornmeal (not coarse)
  • 2 tablespoons light brown sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 eggs
  • 3/4 cup milk
  • 3 tablespoons butter, melted, plus extra for greasing
  • 1/2 cup unsweetened applesauce
  • 2 tablespoons maple syrup
  • Maple Lime Butter, recipe follows
  • Special Equipment: 9-by-9-inch baking dish

Directions

Preheat the oven to 400 degrees F. Grease a 9 by 9-inch baking dish with butter.

In a medium bowl, whisk together the flour, cornmeal, sugar, baking powder, and salt. In another medium bowl, whisk together very well the eggs, milk, butter, applesauce, and maple syrup. Pour the wet ingredients into the dry ingredients and stir to incorporate (do not overmix). Pour into the prepared dish and bake until a toothpick inserted into the center comes out clean, about 25 minutes. Serve with Maple Lime Butter.

Maple Lime Butter:

  • 1/2 stick butter, softened
  • 1 teaspoon maple syrup
  • 1 teaspoon lime zest
  • Salt

In a small bowl, mix the ingredients together until well incorporated. Refrigerate for at least 10 minutes to firm up slightly before serving.

I love the butter recipe and I loved how moist the cake was!

This has become my staple cornbread. My entire family loves the sweetness and how moist this cornbread is. I also added more maple syrup to the maple butter as others had suggested and many times have just used honey instead. Always a hit in my house.

I'm not a huge fan of cornbread, but I thought this was pretty good. If you're looking for something simple to serve with a bowl of chili or beef stew, this works. It's easy to make and reasonably tasty.
