Ingredients
- 1 cup frozen peas
- 2 cups couscous
- 3 tablespoons butter
- 3 sprigs fresh mint, finely chopped
- 1/2 lemon, juiced
- Kosher salt and freshly ground black pepper
Directions
In a medium saucepan over high heat, bring 2 1/2 cups of water to a boil. Add the frozen peas, and boil for 1 minute. Stir in the couscous and butter; turn off the heat. Cover the pan and let rest for 5 minutes.
Add the mint and lemon juice to the couscous and fluff with a fork. Taste and season with salt and pepper, if necessary.

I made this yummy side tonight to go with the Phenomenal Chicken Tagine. My only change was I added garlic salt instead of salt just because I love garlic and for a little added flavor. I was hesitant to add mint to a savory dish but we loved it! I especially love how quickly this comes together. Definitely a keeper and quick side dish.

Great recipe! I had almost all of the ingredients on hand (even the mint from my garden. It comes together so fast and unlike some other couscous recipes, has a lot of flavor. I like how Melissa put the peas in before the couscous and how they then cooked up so easily with the couscous. I have not been disappointed with any of Melissa's recipes - she brings me new recipes that aren't too expensive that end up becoming family favorites.
