Ingredients

  • 3 tablespoons melted butter, divided
  • 2 eggs
  • 1 cup milk, warmed for 30 seconds in the microwave (should be lukewarm to warm)
  • 1 cup all-purpose flour
  • 1 teaspoon kosher salt

Directions

Special equipment: muffin tin

Preheat the oven to 400 degrees F.

Using a pastry brush, coat 8 muffin cups with 1 tablespoon of the melted butter and put the tin in the oven for 5 minutes. Meanwhile, mix the eggs in a blender until light yellow. Add the warmed milk and blend. Add the flour, salt and remaining melted butter, and blend until smooth. Pour the batter into the warmed muffin tin and return it to the oven to bake until golden, about 35 minutes. Remove from the oven and serve warm.

    I have tried many different popovers, including the recipe from a very well known department store. Yes, they were good but very time consuming. Who has time for that in the morning? These are the best. Put together in no time and baked up deliciousness. I used this basic recipe for several different types of popovers, from savory to sweet and all of them were wonderful. Thanks Melissa.

    I made these popovers for a dinner for guests who were very important to me. They turned out great. They were puffy and light and delicious. The recipe is very easy to make and the key is definitely to get the muffin pan very hot in the oven before pouring in the batter. It might have taken a little longer to cook than the recipe says but the result was totally delicious and beautifully impressive. My guests loved them. This one is a real winner.

    I made these in popover pans well greased and preheated in a 450 degree oven for about 5 minutes. I used plain unflavored soy milk because I cannot drink cow's milk. I baked at 450 for 20 and then at 350 for 20 min. They came out incredibly puffy and delicious! I'll be getting that popover pan out more often now and want to try some herb and cheese additions to the batter. Thanks Melissa, another great recipe!
