Ingredients

  • 1/4 cup dried cherries
  • 1/4 cup brown sugar
  • 1/4 cup chopped pecans
  • 1/4 teaspoon ground cinnamon
  • Pinch ground nutmeg
  • 6 Gala apples, rinsed
  • 1/2 cup apple cider
  • 3 tablespoons butter, cut into pats
  • 1/2 cup maple syrup

Directions

In a large bowl, mix together cherries, sugar, pecans, cinnamon and nutmeg. Put aside.

With a melon scooper, core apples to hollow out the middle. Do not go all the way through. Fill each apple core with dry cherry mixture.

Pour apple cider into casserole dish and place apples right side up. Place a pat of butter on apple hole filled with mixture. Drizzle maple syrup on top of all the apples. Bake for 50 minutes.

    Quick, easy to make and a huge hit at my house. I didn't have the apple cider and used water, but that didn't matter. The... sauce was still delicious. I added a scoop of vanilla ice cream to the still-warm apples, drizzled some of the sauce and sprinkled a little extra "stuffing" on top before serving. Mmmm, mmmm!Read more

    Yummy - and a GREAT compliment to the Sausage and Leek Casserole

    Made these apples for Christmas breakfast (along with the Sausage and Leek casserole from the same show.) I'm not much of an... egg eater so I assumed I wouldn't LOVE this as much as the rest of my household...well I was wrong. This was an amazing recipe and good enough for brunch when guests are in town. I served it with the baked apples and when the juice from the apples mingled with the casserole, well, it threw the whole thing over the top. Read more

    This is a great recipe. I didn't see the temperature, either, so decided to read the reviews. Chose to go with 350. I have... cooked for a long time, but never thought about using a melon baller to core the apples. Even my 8 year old could do it (and he did)!Read more
