Directions

Preheat oven to 375 degrees. Melt butter in 9 by 13-inch baking dish. In shallow bowl combine flour, cayenne, garlic salt and oregano. In another shallow bowl beat eggs. Dip chicken into flour mixture, then dip chicken into egg. Roll chicken in bread crumbs. Place chicken in dish and turn to coat with butter. Bake for 30 to 35 minutes. Rotate after 15 minutes. Serve.

    I really wonder if Cathy Lowe actually made this recipe, or rather if she just typed up something that sounded like it would work. I used half the amount of chicken and barely got it to fit in a 9x13 baking dish. So, if you are making the full recipe, you will need two 9x13 baking dishes. I needed significantly less flour than stated in the recipe, but more butter, another egg, and more bread crumbs. I agree that the amount of oregano called for was too much; I would suggest using half that amount. And the baking time is off. I had to increase the oven temperature to 400 degrees and cook 45-50 minutes total.

    We didn't care for the seasonings. The oregano overpowered the taste. The consistancy was fine. But if I were to make this again, I would definitely use different seasonings.

    I made this recipe with chicken thighs and removed the skin first, but followed the rest of the recipe. The chicken did not get crispy at all and was still quite uncooked at the 35 minute mark. The flavor was sort of bland also. A waste of food.
