Ingredients

  • 2 tablespoons olive oil
  • 1 Vidalia onion, chopped
  • 1 carrot, chopped
  • 2 cloves garlic, chopped
  • Kosher salt and freshly ground black pepper
  • 1 tablespoon tomato paste
  • 1 (14.5-ounce) can fire-roasted diced tomatoes
  • 1 (12-ounce) jar roasted red peppers, drained and chopped
  • 2 1/2 cups chicken broth
  • 2 teaspoons sugar, optional
  • 1/2 cup half-and-half
  • 1/4 cup chopped fresh basil, plus more for garnish

Directions

Heat 2 tablespoons oil in a 2-quart saucepan over medium-high heat. Add onions and carrots and saute until tender, about 5 minutes. Add garlic and saute until just fragrant. Season with salt and pepper. Add tomato paste and cook until toasted, just 1 more minute.

Add tomatoes, red peppers, and chicken broth and let simmer for 25 minutes, until the vegetables are tender and the flavors have melded together. Taste for seasoning and add more salt, pepper, and the sugar, if needed. Add half-and-half and basil, and puree using a hand held immersion blender until smooth.

Serve in soup bowls with a sprinkle of fresh basil on top.

    SOOOO Good! Can taste both the tomato and the red pepper, a nice balance. Not too sweet, but not too bitter. I altered this a little bit for weight watchers. I used whole milk instead of half and half. I'm sure the half and half makes a much creamier, but it was plenty rich for me for much less calories. I used 1 Tbsp of Splenda instead of the sugar. I also added more garlic (like 6 cloves I love garlic, and used a big can of San Marzano plum tomatoes, and half a large jar of the roasted peppers. This is my new all time favorite tomato soup!!! You must try this. Easy, yummy, and good for you! For anyone doing WW - it's 6 servings and 2 pts + value using my modifications.

    TASTY??? YES!!!! MY Sister-in-law made this soup for our family Christmas dinner (2011. My very picky grandkids ate so much of this soup we couldn't get through the remaining dinner courses.
    Today is the "real" picky girl's 8th bday, her request for dinner is Auntie's Tomato soup. We called florida and Sis directed us here for the recipe. Thank you Neelys

    I tried this recipe today and it was really good. I also tweeked it. I used alittle goat cheese instead of half and half and it worked well Thanks for a good recipe
