Ingredients
- 2 tablespoons butter, plus more for dish
- 1 small onion, minced
- Pinch cayenne pepper
- 1 package frozen spinach, thawed, drained and chopped
- 1 cup milk
- 2 eggs
- 2 cups shredded sharp Cheddar, plus extra for top
- 4 cups cooked rice
- 1 teaspoon freshly chopped parsley leaves
- 1 teaspoon freshly chopped thyme leaves
- 1 teaspoon chopped basil leaves
- Salt and freshly ground black pepper
Directions
Preheat oven to 350 degrees F. Butter a large casserole dish.
In a large pan over medium-high heat, saute onions with 2 tablespoons of butter and cayenne until translucent. Add the spinach and cook for 3 minutes. Set aside.
In a large bowl, whisk together milk and eggs.
Add the cheese, rice, parsley, thyme, basil and spinach mixture and combine well. Season with salt and pepper.
Pour into prepared casserole dish and top with extra shredded cheese. Bake for 30 minutes and serve piping hot.

This is easy to make and tasty. I invited some of my family over to eat and made this for the first time and everyone liked it. I will make this again.

There is no mention as to how big a package of frozen is. Where I live it is 500g. So someone said this is like the goya recipe so googled that and they said to use an 8 ounce box of frozen spinach. So in the end I used double the amount of spinach that I should have. Other than that I followed the recipe exactly. I really liked it but my husband didn't. It certainly wasn't dry and it wasn't bland either. To me it tasted like moist cheesy rice. If I make it again I might add some meat that might make hubby happy.

I've made this recipe a few times and it's loved on each occasion.
It is easy and delicious. I used brown rice. It was terrific!
