You can create up to five timers

Ingredients

  • 1 large mango, pitted and flesh diced
  • 2 limes, juiced
  • 1/4 cup olive oil
  • 1/2 teaspoon ground cumin
  • 1 (15-ounce) canned black beans, drained and rinsed
  • 1 cup cooked long-grain rice, cooled
  • 1 cup cherry tomatoes, sliced in half
  • 1/2 small red onion, finely chopped
  • 1/4 cup chopped fresh cilantro leaves
  • 1/2 jalapeno, seeded and finely chopped
  • Pinch kosher salt and freshly ground black pepper

Directions

Add all of the ingredients to a bowl and toss. Cover the bowl and let sit in the refrigerator for 1 hour for the flavors to develop or serve immediately.

    Pairs WONDERFULLY with the Jerk Chicken Recipe from the same episode. I also use the whole jalapeno bc I love spice. Other than that it needs no alterations! Definitely gets better with time so if you can, make it ahead of time! Use this and the leftover jerk chicken on tortillas to make tacos. Yum.
